Zesty Malta Orange Marmalade CakeA soft, buttery citrus loaf cake infused with Malta Orange Marmalade and finished with a glossy citrus glaze.

Ingredients
For the Cake1) 1½ cups all-purpose flour2) 1½ tsp baking powder3) ¾ tsp salt4) ½ cup butter, softened5) ¾ cup unrefined sugar6) 3 tsp finely chopped candied orange and lemon peel or 2 tsp grated lime zest and ½ tsp grated orange zest7) ⅓ cup Himalayan Haat Malta Orange Marmalade8) 3 large free-range eggs9) 2 tbsp fresh orange juiceFor the Marmalade Glaze1) ½ tbsp butter2) ⅓ cup Himalayan Haat Malta Orange Marmalade
Method
1) Preheat the oven to 180°C. Grease and line a 9 × 5-inch loaf pan with baking paper.2) In a large bowl, whisk together the flour, baking powder, and salt.3) In another bowl, beat the butter and sugar until pale and fluffy. Add the candied citrus peel or fresh zest and mix well.4) Add the eggs one at a time, beating after each addition until the mixture is smooth.5) Fold in Himalayan Haat Malta Orange Marmalade and fresh orange juice.6) Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.7) Pour the batter into the prepared loaf pan and smooth the top.8) Bake for 50–55 minutes, or until the cake is golden and a skewer inserted into the centre comes out clean.9) Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.10) Recipe by @ambrosiasoulfulcooking
