Roasted Chickpea Salad with Paneer DressingA wholesome, protein-rich salad with crispy chickpeas, fresh vegetables, and a creamy paneer dressing.
Serves2-3
Ingredients
1) 2 cups kabuli chana (chickpeas), soaked overnight.2) 1 tsp Himalayan Haat Roasted Garlic Chilli Salt.3) 2 tsp salt, for boiling chickpeas.4) 1–2 tsp oil.5) 1 tsp chole masala.6) 1 cup chopped vegetables (cucumber, lettuce, tomatoes, onions, bell peppers).7) Nuts and seeds, for garnish.8) Chaat masala, optional.9) 50g paneer.10) ½ cup curd.11) A handful of fresh coriander.12) ½ tsp black pepper.13) Salt, to taste.14) Juice of ½ lemon.
Method
1) Boil soaked chickpeas in water with 2 tsp salt for 4–5 minutes until slightly tender. Drain and allow them to cool..2) Toss the chickpeas with oil, Himalayan Haat Roasted Garlic Chilli Salt, and chole masala until evenly coated..3) Transfer the chickpeas to a baking tray or air fryer and roast at 180°C for around 20 minutes, flipping halfway through, until crispy..4) To prepare the dressing, blend paneer, curd, coriander, black pepper, salt, and lemon juice until smooth and creamy..5) Add chopped vegetables to a mixing bowl. Top with roasted chickpeas and drizzle over the creamy paneer dressing..6) Toss everything together and finish with chaat masala, nuts, and seeds..
