Ingredients
1) 2 tbsp olive oil2) 1 cup button mushrooms, thickly sliced3) 1 clove finely chopped garlic4) 1/2 bunch green onions, thinly sliced5) 1/4 teaspoon salt6) 1.5 cups diced/grated cheddar or mixed cheese7) Small handful of fresh coriander leaves8) Tomato Basil Sauce With Garlic & Chia9) Pinch of ground black pepper
Method
1) In a large skillet, heat the oil over medium-high till it shimmers. Add the mushrooms and cook for 5 minutes, stirring occasionally.2) Add the garlic and onion greens to the pan and cook for a few minutes until the garlic is aromatic. Add salt and pepper.3) Wipe out the skillet. Once hot, place a tortilla in the pan and spread 2 tbsp of Tomato Basil Sauce.4) Sprinkle 2 tbsp of cheese, then a layer of cooked mushrooms. Top with coriander leaves and another 2 tbsp of cheese. Fold in half.5) Cook on one side for about 1 minute, or until the cheese begins to melt. With a large spatula, flip the quesadilla over and cook for another 30 seconds or until the cheese melts and the tortillas are lightly toasted with a few brown spots. Repeat with the remaining tortillas, cheese, and filling.6) Cut each quesadilla into quarters as they finish cooking and serve while hot. Enjoy!
