Blackberry Protein Salad

Blackberry Protein SaladA wholesome, protein-packed salad with fresh greens, fruit, nuts and seeds and creamy Wild Blackberry dressing.

Ingredients
For the Salad1) ½ cup boiled chickpeas2) ½ cup boiled black chana3) 150–200g paneer, cubed4) 1 cup baby spinach or lettuce5) ½ cup apple, diced6) ¼ cup pomegranate arils7) 1 tbsp roasted almonds, chopped8) 1 tbsp walnuts9) 1 tbsp pumpkin seeds10) 1 tbsp sunflower seeds11) 1 tbsp sesame seedsFor Roasting1) 1½ tbsp olive oil2) ½ tsp Himalayan Haat Rosemary Garlic Salt3) ½ tsp black pepper4) ½ tsp chilli flakes5) ½ tsp roasted cumin powder6) A squeeze of fresh lemon juiceFor the Creamy Blackberry Dressing1) 3 tbsp thick hung curd2) 1–1½ tbsp Himalayan Haat Wild Blackberry Preserve3) 1 tsp Himalayan Haat Apple Cider Vinegar4) ½ tsp Himalayan Haat Rosemary Salt5) 1 tsp olive oil6) Black pepper, to taste7) Small handful fresh coriander leaves8) 1–2 tbsp water (if needed)
Method
1) Heat olive oil in a pan over medium heat.2) Add the boiled chickpeas and black chana. Season with Himalayan Haat Rosemary Garlic Seasoning, black pepper, chilli flakes, roasted cumin powder, and a squeeze of lemon juice. Roast for 5–6 minutes until lightly crisp.3) Remove the legumes and, in the same pan, sauté the paneer cubes until lightly golden on the edges.4) To prepare the dressing, blend together hung curd, Himalayan Haat Wild Blackberry Preserve, Himalayan Haat Apple Cider Vinegar, Rosemary Salt, olive oil, black pepper, and fresh coriander until smooth. Add a little water only if needed to adjust the consistency.5) Arrange spinach or lettuce in a serving bowl. Top with roasted chickpeas, black chana, golden paneer, diced apple, and pomegranate.6) Drizzle generously with the blackberry dressing and gently toss.7) Finish with roasted almonds, walnuts, pumpkin seeds, sunflower seeds, and sesame seeds before serving.
