At Himalayan Haat, we make everything on our forest farm in Pauri Garhwal from seasonal Himalayan produce, by hand, in small batches. One of the most intentional choices we’ve made is this: No artificial additives or preservatives in any of our products.


That decision affects everything — from how our food tastes, to how long it lasts, to how we ask you to store it.


The Taste of Real Ingredients

When you remove artificial preservatives and stabilisers, the ingredient itself has to carry the flavour. Our preserves, coolers, chutneys and sauces are made from fruit, herbs and flowers grown on our forest farm, along with naturally grown local produce. That means the flavour you get in each jar is the real taste of ripe strawberries, buransh, citrus or herbs — not something adjusted to be identical every single time.


Batches can vary slightly from season to season because the fruit itself changes with rainfall, sun and soil. We see that as a strength, not a flaw — it’s how you know the food is seasonal and not engineered to be uniform.


In many processed foods, preservatives and additives don’t just extend shelf life — they can also alter or flatten flavour, so everything begins to taste the same. When you remove them, you taste more of the actual fruit, spice or herb in each spoonful.


Ingredient Integrity Over Additives

Because we refuse artificial additives and preservatives, we have to be far more careful about the ingredients and processes we use. Produce is harvested at peak ripeness, retaining full flavour and natural sweetness, unlike unripe fruit, which is transported hundreds of kilometres to a processing factory.


We work in small batches in our farm kitchen, with pahadi women hand-preparing, cooking and bottling each product rather than relying on highly mechanised, large-volume production. Instead of chemical preservatives, we lean on traditional methods where they make sense — sugar, salt, vinegar, careful cooking temperatures, and proper sealing.


Harsh processing and heavy use of preservatives can also break down certain nutrients over time, while gentle, small‑batch methods help the fruit retain more of its original goodness. The goal is simple: Keep the ingredient list short and recognisable while still respecting food safety and quality.


What That Means for How You Store and Use Our Products

Preservative-free food needs a little more care — but nothing complicated. Many supermarket products are designed to sit on shelves for years, thanks to preservatives and stabilisers. We’ve chosen the opposite: a reasonable shelf life, cleaner ingredients, and more natural flavour — even if that means your jar has to be enjoyed a little sooner.


Our products have a shelf life of up to 12 months when unopened because we use careful processes, proper cooking methods, hygienic bottling and traditional preservation techniques. The difference is what happens after opening.


We’ll always tell you clearly how to store each product on the label and online, whether that means refrigerating after opening or using it within a particular time frame. Following these instructions helps you enjoy the product at its peak flavour and texture.


A few simple habits go a long way:

  • Keep lids tightly closed.
  • Use clean, dry spoons.
  • Refrigerate where indicated and avoid repeated temperature swings.


This isn’t about being fussy — it’s about treating food as something that changes naturally, instead of something engineered to stay the same forever.

We grow and source fruit, herbs, and flowers from our own regenerative forest farm and from marginal farmers around us, then turn them into condiments, coolers, and herbal blends with no artificial additives or preservatives.
