Pahadi Cuisine: Khatai

We have brought to you the recipe of one of the most popular pahadi snacks – khatai – made with citrus. This is usually enjoyed on sunny winter afternoons when the women of the neighbourhood gather and prepare this lip-smacking khatai.

1. Peel the citrus fruit of your choice.

2. Remove the seeds and carefully separate the pulp from the skin.

3. For Pisyun Loon:
Take a few strands of garlic leaves, few coriander leaves, 2-3 green chillies, 5-6 garlic cloves, 1 tsp cumin, 1-inch ginger & 1-2 tsp rock salt. Grind together!

4. Add sugar and pisyun loon. 

5. Mix well and enjoy!
